Tired of having the same side dishes all the time? Yup, we are too. That’s why we wanted to try something a little bit different with things that we had around the house.
I have a secret confession to make. Ever since my parents showed me a TGIFridays I have had a secret obsession with potato skin appetizers. They were just the perfect combination of cheesy, bacony goodness. To this day they are still one of my favorite treats when I am at a party.
This week we were trying to clear out our pantry and we were in luck, we had cheese, and tons of potatoes. That’s how I came up with these cheesy garlic potatoes! They aren’t quite as much work as potato skins because you don’t have to scoop anything out. Just slice your potatoes, layer them up with goodies! You can use these as a great party appetizer or just a different side dish for the family to enjoy! Either way they are sure to be a hit!

Ingredients
- 5 Large Russet Potatoes
- 16 oz of cheddar cheese
- Green Onions
- Garlic Powder (to taste)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat the oven to 350 degrees
- Coat potatoes in salt, pepper, and garlic powder and place on a greased cookie sheet
- Cook for approximately 30 minutes or until tender
- Switch oven to low broil setting
- Cover potatoes with cheese and onions
- Broil for five minutes until all cheese is melted
