If you ever need to do dinner in a pinch, this easy roasted chicken recipe is great! It’s literally a recipe you prep in five minutes, but it seems like you spent hours in the kitchen.
Last week was actually the first time that I had served this dish to a guest, and she said that it was the best chicken she has had in a while! (Which of course made me smile) This recipe is so juicy that when I cut the chicken, it literally dripped all over my floor. I had to crate the dogs up and throw a towel down to catch all of the juices! My dogs weren’t too happy about it, but didn’t want two pups between my feet.
This recipe takes about 2 hours from start to finish, but it’s quick prep time allows you to get other after work duties done while dinner cooks! This recipe feeds about six people, and we usually have leftovers for quesadillas the next night too!

Easy Roasted Chicken with Rosemary Recipe

- Cook Time: 1 hour 45 mins

Ingredients
- Whole Chicken (approximately 5-7 pounds)
- Whole rosemary stalks
- Whole Thyme Stalks
- Olive Oil
- Pepper
- Garlic Powder
Instructions
- Preheat the oven to 350 degrees.
- While oven is heating, gentle separate skin from the chicken meat with your hand.
- Between the skin and the meat, place the rosemary and thyme stalks. Stuff extra in the chicken carcass for extra flavor.
- With a basting brush, coat the skin with olive oil.
- Coat with pepper and garlic powder to taste.
- Cook at 350 degrees for approximately (1 1/2-2 hours) or until chicken is at 175-180 degrees.
- Remove from oven and allow chicken to rest for about 5 minutes.
- Carve and serve hot!
