This girl is a sucker for anything lemon. (Well, at least in the lemon desserts category) Growing up one of my absolute favorite recipes was my mom’s lemon meringue pie. For days that I didn’t want to go through all the fuss of making a pie, these homemade lemon bars are a close second to that pie.
These homemade lemon bars are super simple to make, and trust me you won’t bother with a boxed mix after seeing how easy homemade bars can be to make. One of my favorite things about this recipe is you can easily switch out the lemon bars and make lime bars or some other yummy fruit flavor. Homemade dessert bars are fun and easy to make, but taste like you spent all day slaving away in the kitchen. (Don’t worry I won’t tell)
I might be a little obsessed with lemon. It’s so sweet and tangy, kinda like my personality. Sweet with a quirky bite. It also reminds me of warmer months. Don’t know if it’s all the sunshine that lemons need to grow, but even during the longest Minnesota winter lemon dessert bars bring a little sunshine to my life. Who couldn’t use a little sunshine right?
This is also a great dessert bar recipe to have the kids help in the kitchen. Ever since my kids were little, we would find fun recipes to help teach them to cook. When I left home, the only thing I knew how to make was grilled cheese and soup. (Ok, my brother told me I made a mean fried egg sandwich as well, but that was the extent of my culinary talents) Now cooking is a way that I bond with the kiddos. All three of them know how to make enough food so I know they won’t starve to death when they leave the house. (I am such a good mom , aren’t I?!)

Homemade Lemon Bars
These homemade lemon bars are one of my favorite dessert bar recipes. Bring a little sunshine to your life.

Ingredients
- Crust Ingredients:
- • ½ cup Butter, softened
- • 1 1/3 All Purpose Flour
- • ¼ cup Sugar
- Lemon Layer Ingredients:
- • 2 Eggs
- • ¾ cup Sugar
- • 2 Tablespoons Flour
- • 3 Tablespoons Lemon Juice
- • ¼ teaspoon Baking Powder
Instructions
- Crust Ingredients:
- • ½ cup Butter, softened
- • 1 1/3 All Purpose Flour
- • ¼ cup Sugar
- Lemon Layer Ingredients:
- • 2 Eggs
- • ¾ cup Sugar
- • 2 Tablespoons Flour
- • 3 Tablespoons Lemon Juice
- • ¼ teaspoon Baking Powder
- Preheat Oven to 350 degrees
- In a large bowl, mix together the crust ingredients. It should form a nice, crumbly dough.
- In the bottom of a greased 8×8 baking dish, press the dough using a fork or your fingers.
- Bake the crust at 350 degrees for 15 minutes.
- In a second large bowl, mix the eggs, sugar, flour and lemon juice until well combined.
- Add in the baking powder last. Make sure no lumps remain.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 15 to 20 minutes or until the lemon layer is set.
- Cool for several hours before cutting and serving.
- Sprinkle with powdered sugar before serving.

Lemon bars are one of my favorite treats to make…and I agree. They are SO easy it’s almost a crime. For years, I always brought them to the potlucks and parties because they were delicious and easy…and everyone was always impressed. I just had to giggle to myself!
