Just because you want a dinner that is quick and easy, doesn’t mean that you have to make something that is tasteless. This pineapple habanero sausage with rice is amazingly flavorful, and the best part is that it’s completely frugal. You can feed your family for less than $2 a serving! Because of hot sales this week, I was able to get all the ingredients for less than $5! This makes enough to feed at least a family of 5.
Next time sausage goes on sale, make sure to stock up and freeze them. That way you have the main ingredient to this dish when you need to make dinner in a hurry. Now onto this fabulously frugal recipe; pineapple habenero sausage with coconut milk rice!
Ingredients:
1 can Coconut milk, plus enough water to make 2 cups
1 cup brown rice
1 lb sausage, preferably heat n eat, or turkey
1 can pineapple tidbits in juice, drained
1/2 cup pineapple habanero jelly
Directions:
Place the coconut milk, water, and brown rice in a 4 quart or larger saucepan. Heat until simmering, place a lid on the top, and simmer about 45 minutes, watching to make sure the pan doesn’t simmer dry. Add more water if necessary.
About 30 minutes after starting the rice, cut the sausage into rounds. Place in a frying pan over medium heat. Add pineapple and saute until browned. Once browned, and just before rice is tender, add 1/2 c jelly, stirring constantly to coat the meat and fruit.
To serve, place rice in a bowl and spoon meat and fruit over the top. Sprinkle with coconut if desired.
