Ever since having to live a gluten free lifestyle due to some health issues, I’ve been trying to find creatively easy gluten free recipes that make me not miss eating glutenanymore. This girl has a SUCH a sweet tooth and loves to snack, so finding easy recipes for gluten free snacks that I can take on the go was a must. There is nothing worse than having to eat gluten free, being out and about and starving. Just to realize that there isn’t anything you can eat in a five mile radius (ok, so I am exaggerating a bit, but you get my drift it’s desperate times people’s desperate times) That’s why when I found out that Cheerios™ is now gluten-free a happy dance began!

I’ve been gluten free for not quite a year now, and I’m learning lots of tips and tricks to make it easier to avoid gluten in your foods. Plus, tons of great retailers are starting to carry more and more gluten free products, which rocks this girl’s world.
This week, I found out that Cheerios, one of my favorite childhood cereals, now has a gluten-free option. Yeah for gluten-free cereal. I was so happy about gluten-free Cheerios that I just had to find a fun way to celebrate. That’s where these four ingredient peanut buttery, chocolatey gluten-free homemade cereal bars were born.
Before, we get to the ooey, gooey bars you should know there’s a cool story about why Cheerios started making a gluten-free version. An engineer at General Mills, Phil Zietlow, found out his daughter-in-law was diagnosed with Celiac disease, and he made it his mission over six years to make Gluten-Free Cheerios! That’s one pretty awesome father-in-law, and I know I am sure am thankful too! It’s so hard finding gluten free foods sometimes, and this made it a whole lot easier. On top of that we have all these fun flavors to choose from! Personally, to eat straight I am an apple cinnamon girl, but love cooking in fun ways with the Yellow Box Cheerios™ or Honey Nut Cheerios™. To pick your favorite flavor, just look for the Gluten Free seal on Cheerios™, Yellow Box Cheerios™, Honey Nut Cheerios™, MultiGrain Cheerios™, Apple Cinnamon Cheerios™ and Frosted Cheerios™. Now that you know the story behind the Cheerios of awesomeness, get ready to drool. These gluten-free cereal bars are drowned in peanut butter and chocolate. It’s like the little Cheerios are screaming as a slide of chocolate is sweeping Cheerioland to drown them in chocolatey goodness! This pan quickly disappeared from the kitchen when they were done!
Ingredients:
6 Cups Gluten-Free Cheerios
1 1/2 Cup Gluten-Free Dark Chocolate Chips (Separated)
1/3 Cup Honey
1/3-2/3 C Cup Peanut Butter
Directions:
In a large bowl, combine the honey, peanut butter, 1/2 cup chocolate chips
and cereal. Mix until even coated
In a 13X9 baking dish, press the cereal mixture into the pan using wax paper. Make sure to press pretty firmly, but not so firmly you crush the cereal, to make sure they stick together.
In a double boiler, or a pot filled with water with a metal bowl sitting on top melt the chocolate.
Once the chocolate is melted, drizzle it across the top of the cereal bars.
Place in the fridge for about 45 minutes to an hour to let the bars set.
Cut and Serve!

Sorry, I couldn’t resist. Are you aware of the controversy around the “gluten-free” Cheerios? I know we all have a right to be informed and to choose to eat gluten-free. Those Cheerios are not as gluten free as you would think. I personally am not purchasing them, not eating them. I would at least add eat at your own risk with this recipe.

Thanks for the comment, Michelle. Being a food allergy mom, I always tell people to keep in mind that companies do their own testing when it comes to Gluten Free so if they aren’t sure they are comfortable eating something to always call the manufacturer and ask questions.
