Not many of us in the Crunchy household are morning people. That’s why I love making easy breakfast ideas, like these pancake recipes, for the morning that the kids can just grab themselves and get ready for homeschool in the morning.
This Christmas my in-laws sent us this really cool pancake and french toast stick maker. It’s about the most amazing kitchen appliance that I have ever gotten as a gift. It’s so loved that it’s right up there with my KitchenAid Stand mixer.
One of my kids favorite recipes to make with our pancake maker is our freezer pancake sticks. I make batches and batches of the sticks and then put them in a freezer safe bag. Then all the kids have to do is toss a few in the microwave to grab breakfast! The best part is that I can add different mix ins to each batch so we can have several different varieties in the freezer for the kids to choose from. (It also lets me make my allergy friendly pancakes for my youngest daughter)

Ingredients:
1 1/2 Cups Flour
1 Teaspoon Salt
1 Tablespoon Sugar
3 T Extra Virgin Olive Oil
1 Large Egg (or egg substitute see below)
1 1/4 Cup Milk (or milk substitute)
3 1/2 Teaspoons Baking Powder
2 Teaspoons Vanilla
!Egg Substitute (mix all together before adding to main recipe)
2 Tablespoons of Water
1 Tablespoons of Oil
1 Tablespoon of Baking Powder
Directions:
In a large bowl, mix all of your dry ingredients together with a whisk.
Add milk, egg, vanilla, and oil to dry mix
Beat on low until all lumps are gone.
Place a small amount of oil in cold pancake stick maker and coat, so they won’t stick
Allow to heat for just a few seconds, and then use enough batter to coat the bottom of the maker.
Close.
When sticks are golden brown on top, remove and allow to cool.
Once cool place in a freezer bag, but lay bag down flat. Freeze one row of sticks, and then once frozen add another layer. (This prevents sticks from freezing together)
When you are ready to eat, break off desired amount of sticks and place in microwave for 30 seconds.

I want that pancake stick maker! Oh my goodness! I could cook up pancake sticks and freeze them and my kids would be the happiest kids in the world! They eat the frozen sticks from the store all the time. It would be awesome if I could make them myself, I wouldn’t have to buy them anymore! I love that they can be frozen so I could make a large batch one day and have enough super fast breakfasts for the next week of school mornings.

My kids thought I was a genius when I figured this out. It’s super simple, and they love that you can add different mix ins to make different flavors. I make a big batch about one a month, and they love it!

I’ve never seen one of those before! So cool! It reminds me of my sandwich grill that I had in college (which had previously been my grandma’s). Best appliance ever! I have a waffle maker that I often make batches of waffles with, and then I cut them into quarters, put them into a baggie and freeze them. I’ll bring a bag of waffles to work and throw ’em in the freezer so I have a great breakfast or snack (or sometimes lunch, because a PB&J sandwich made on a blueberry waffle is delish!). So much cheaper (and healthier I’m sure) than buying boxed stuff. And you can make what you really like too 🙂

I like that this is a preservative free alternative to frozen kid’s breakfast snacks. I, too, love to bake/cook in bulk!

I really love pancakes,and I love this recipe and want to get the pancake stick maker so I can make these. I do not like cooking in the morning, so I could make these up and freeze them and then just pop them in the microwave and eat. Great recipe! Thanks so much!

sounds like a great recipe! i actually just sat down with my pancakes i made (i was really craving some) I used protein powder, 1/2 mashed banana, cinnamon, almond milk and an egg to make it and it was delicious (my first try at them!)

How cool is that! I just bought a waffle maker this week from Amazon… had no clue that they even made pancake stick makers. I guess that’ll be the next gadget I’ll have to invest in. lol

In my experience, Elizabeth, anything baking that requires eggs usually does ok. So breads, pancakes, waffles, muffins, cookies, cakes should be ok.
