Turkey day is right around the corner. That’s why this girl was on a mission for easy Thanksgiving side dishes. It’s always such a crazy day anyway, why have more cooking work than you need to. Lucky for you guys, I did all the digging and came up with these really easy butter and herbed baked red potatoes. They are super simple to make and really tasty.
When I say it’s easy, I mean E-A-S-Y! This side dish is so easy it’s a great dish to teach your kids how to make as well. (They need to know how to make something for when you are old and they are taking care of you) From start to finish this dish takes a little less than an hour, but it’s one of those fix it and forget it kind of dishes.
Baked Herbed PotatoesWhen you think holiday baking, normally you envision mounds and mounds of holiday cookies. This girl loves cookies, but I wanted to bake something a little bit different because a girl can only eat so many cookies. This holiday season I seriously have a stockpile of butter. Mr. Crunchy has actually banned me from buying anymore (I wish that was a joke). Butter is one of those things that you can freeze and store so easily. Land O’ Lakes butter sticks freeze like a champ, so when they are on sale I stock up. (I will spare you pictures of my freezer). For this recipe though, I headed to Wal-Mart despite the butter Nazi’s ruling!
So, now you know I am addicted to buying butter I will share that I am addicted to these potatoes. We had them for dinner last night, and I had to threaten lives to have enough to save to take these pictures. The kids are getting bigger, so it’s a hard task even with lives threatened to keep the vultures off of the food. Luckily for you, I was able to spare some so you can drool over these potatoes. (Warning, I am NOT liable for any computer damage because you can’t help but lick the screen)
Ready to dig in? Here’s what you need!
PrintSuper Easy Thanksgiving Side Dish: Herbed Red Potatoes

- Cook Time: 30 mins

Ingredients
- 1/2 Stick of Land O Lakes Butter
- 4-5 Large Red Potatoes
- 2-3 t Italian Seasoning
- 2 t Garlic Powder
- Salt and Pepper to Taste
Instructions
- Preheat oven to 425 degrees
- Wash and cut potatoes into 1/2 inch “quarters” (they should be wedge like)
- In a microwave safe dish, melt the butter and then mix in the herbs
- Place potatoes on a baking dish, and baste the potatoes with the herbed butter.
- Bake in the oven until easily poked with a fork (approx. 25-35 minutes)
- If you like them extra crispy, broil for 2-5 minutes on high but make sure to constantly watch them or those puppies will burn.
- Remove and enjoy!
