I am the total gluten-free dork. I will admit it. When I see more and more gluten-free products coming into the stores it makes my heart sing!

That way you don’t have to feel like you are climbing Mount Everest just to find something you can eat.
No longer feeling like the loner that can’t eat the glutens, you will raise your head high in your gluten-free awesomeness and say, ‘Yes, yes I too can have amazing things to eat!” Wow, that was so powerful.
Ok, enough dorkery. Gluten free breakfast casseroles like this one is piled high with bread, eggs, sausage, and dripping with yummy, oozey, cheesey goodness.
It’s so crazy easy to make, and you can play around with the ingredients to make it how your family likes it. My family loves it with green peppers and green onions.
If it were up to me, I would throw in some mushrooms as well, but the mushroom hate crowd in this family vetoed me on that one! Nevertheless, get creative!

Can you make this gluten free egg bake ahead of time? Yup! It’s super easy to make this breakfast idea ahead of time. The best way is to go ahead and bake all the ingredients in an aluminum pan and throw it in the freezer. When you are ready to eat, just pop it in the oven at 350 degrees for about 10 – 15 minutes or until warm in the center.
Can you make a dairy free breakfast casserole? The great thing about this recipe is that it’s really easy to make it a dairy free breakfast casserole recipe. Just substitute the following ingredients:
- Vegan Shredded Cheese (We love the Daiya brand of cheese)
- Non Dairy Milk Substitute (2 3/4 Cups)
- Double check your bread to make sure there is no dairy in there either 🙂
I don’t like veggies. EWW! Do I have to have vegetables in my breakfast casserole? Of course not! The great thing about this recipe is the egg mixture makes a great base for your casserole, but the rest is up to your imagination!
Throw extra meat in there. Bacon and ham are delicious!
Does this recipe work with regular bread? Not gluten free? Yup, you can make this exact same recipe using regular “leaded” gluten filled bread if you don’t need to be gluten free!

GOODIES NEEDED FOR THIS EGG BAKE GLUTEN FREE BREAKFAST RECIPE
Gluten Free Egg Bake Ingredients
Ingredients:
- 10 eggs
- 2 1/2 Cups Milk
- 1/4 Cup Heavy Whipping Cream
- 3 cups sharp cheddar cheese (grated)
- 6 slices of Gluten Free bread (cubed)
- Salt (to taste)
- Pepper (to taste)
- 1/4 tsp Garlic Powder
- 1/2 tsp Dry Mustard
- 1 Package Breakfast Sausage
- 1 Green Pepper
- 1 Tbsp Olive Oil
Directions:
- Preheat oven to 325 degrees.
- While the oven is heating, dice your bell pepper, and sautee it in a pan with olive oil. Set aside.
- In a large skillet, cook sausage until it’s no longer pink and crumbles.
- In a buttered 13X9 pan, place a layer of half of the cubed bread. Cover with half of the sausage, peppers, and cheese. Repeat with a second layer leaving a little bit of cheese to top casserole with.
- In a large bowl, combine the eggs, milk, cream, pepper, salt, garlic powder, and dry mustard. Beat.
- Gently pour egg mixture over the bread mixture in the baking pan. Top with remaining cheese.
- Place in the oven and bake for about 50-55 minutes until eggs are set. Remove and serve warm, or you can freeze and serve another day!

Can this be stored overnight raw and then cook in the morning?

Alyssa, I don’t see why not. What I would do is cube up the bread and don’t add that in until the morning. Otherwise the bread will be super soggy.
