I’ll admit. When I first moved to Minnesota, I saw how much the locals here used instant potatoes and I was NOT a fan. Growing up in the south, I was always told to make potatoes from scratch.

The loaded baked potato soup is yum, yum, yum. Yep, that’s my 5 star review. YUM!
It was negative 70 this week, and I am NOT joking.
Negative fricking 70 degrees. (I live here because I enjoy being punished I guess)
People were clearing the shelves of bread and milk like a hurricane was coming this week.
Not me, I had Idahoan® Steakhouse® Soups in the cupboard some leftover bacon, cheese, and green onions.
D O N E! plus I didn’t have to worry about losing body parts to frost bite.
Just add water and you have a creamy, hearty soup with dancing flavors across some kick butt Idaho potatoes.
Jalapeno Cheddar Cornbread: HELLO, you Cheesy Spice Darling
One thing I do like to do when it is super cold out side is bake!
Soups can’t just be eaten alone. They get lonely. Do you want to make your soup lonely?
Then get ready for more awesomesauce….

Jalapeno Cheddar Cornbread……..Semi Homemade……..Totally AWESOME!
My grandma is probably rolling over in her grave that I’m about to teach you how to hack some kick butt cornbread.
One of my fondest memories was her homemade cornbread fresh from the cast iron skillet.
Love you grandma!
But this quirky girl doesn’t have the heart to do that.
In and out of the grocery store in 5 minutes flat.
Dinner/lunch/brunch done in less than 20
Here’s what you need for this cornbread:
Ingredients:
One medium jalapeno diced
One medium jalapeno sliced in rings (seeds removed)
One pre-mixed cornbread mix (+ ingredients it requires)
1/2 of cheddar cheese + extra to garnish
2 Tablespoons olive oil
Directions:
Preheat your oven per the directions on the cornbread mix.
In a small skillet, heat the olive oil and place the diced jalapeno.
Constantly moving around, sautee the jalapeno until tender. Remove from heat.
Mix the batter according to the cornbread mix.
Gently fold in the cheese and the sauteed jalapenos.
Put in a 8×8 pan and cook.
3 minutes before the cornbread is done, sprinkle the top of the cornbread with cheese.
Place the rings of jalapenos across the top of the bread.
