I really suck at repurposing leftovers. That’s probably why most of my family hates eating Thanksgiving leftovers. This year, I was challenged by Good Cook to find a way to repurpose the yummy food we had leftover this year. I had NO ideas, so I had to enlist help from my friend Michelle from Grub Geek to help me come up with these leftovers. Wondering what to make with Thanksgiving leftovers? Make stuffing cups! (I had never heard of them before either, but they are amazing!)
You guys know I am all about recipes being super simple. There’s no need to have a culinary degree to make my dishes, and this includes these turkey stuffing cups! They are a great way to use up the turkey, mashed potatoes, stuffing and gravy you have leftover after your big feast!

Ingredients
- Leftover Turkey
- Leftover Mashed Potatoes
- Leftover Stuffing
- Leftover Gravy
- Water (as needed)
Instructions
- Preheat oven to 350 degrees
- In greased muffin tins, place a layer of stuffing. If the stuffing has become dry. Add some water so it is easier to make a base layer
- Place a layer of turkey, and then a layer of mashed potatoes.
- Press the layers down to “seal” the cup.
- Bake in the oven for 10-20 minutes until the top is a little browned.
- Remove from the cupcakes, and drizzle with gravy.
- Enjoy!
Even if you find this recipe, and it’s not after Thanksgiving, it’s a great way to use up leftovers or just a different way to serve a dish your family eats often.
The Good Cook muffin pan, make these even easier to make. There’s no need to grease them. The stuffing cups pop right out once you separate them from the sides!
