Cheesecakes are one of my absolute favorite desserts. They are rich and creamy, but man they are loaded with calories. To make my favorite sweet a little bit lighter, I came up with a way to make mini cheesecakes. They are only about 300 calories a piece, and they are just enough to satisfy that cheesecake craving that has been known to drive a woman wild.
These mini Oreo cheesecakes have oreo cookies crumbled throughout, and top with a single Oreo cookie on top. It adds a nice little touch. Even with out a crust this cheesecake will sure to be a hit at any party you take it to, or just enjoy it at home. Your family will love you for it.
Ingredients:
2 Philadelphia Cream Cheese 8 oz Packages (softened)
1 1/2 tsp Vanilla
1 cup sugar
2 eggs
1 cup sour cream
Approximately 20 Oreo Cookies (separated)
Wax paper
Directions:
Preheat the oven to 350 degrees.
Place the softened cream cheese in a blender with the sugar, and blend until well mixed.
Add sour cream and vanilla, and blend on low until evenly mixed.
Add one egg at a time. Blend on low. (Make sure to scrape the sides so that all the batter is consistent)
Separate 6 Oreos from the filling and set aside.[br][img:1]
Take the remaining cookies and coarsely cut them.[br][img:2]
Fold the cut cookies into the cheesecake batter using a spatula.
Cut 5X5 in squares of wax paper. Use them to line the cups of a cupcake tin.
Place one Oreo cookie, writing side up, in each tin.
Fill each cup 3/4 of the way full with batter.
Place in the oven for approx. 20 minutes or until center is set.
Cool
Once cool, place in refrigerator for 3-4 hours.
Remove wax paper and serve cookie side up.

Hopefully the love will overtake the hate hahaah. Trust me these are completely do able even on a non-cheat day :). 300 calories is WAY better than 600-700 😉
