Everyone knows that gingerbread men cookies are kind of a big deal during the holidays, but what if yours weren’t just gingerbread men! That’s right. Make some cookies that kick a little ass this year and make yours NINJAS! (Everything is cooler when ninjas are involved)
When I was in Seattle last month, I found these really awesome ninja cookie cutters, but sadly I chose not to buy them. I kept thinking about them, and thinking about them. I finally broke down, crossed my fingers, and searched Amazon for ninja cookie cutters. By the powers of the almighty ninja gods, they actually had the ninja cookie cutters I wanted! Score!
Whip up a gingerbread cookie recipes, and a little cream cheese frosting, and these cookies are kicking butts and taking names.

These ninja gingerbread men will kick some butt this holiday season

Ingredients
- 4 Cups Flour
- 1/3 C Molasses
- 1 C Packed Brown Sugar
- 1/2 Honey
- 1 tsp Ground Ginger
- 4 tsp Pumpkin Pie Spice
- 3/4 C Butter, Room Temperature
- 1/4 t Salt
- Ninja Cookie Cutters
- 2 Tbsp Water (if necessary)
- 2 Packages Philadelphia Cream Cheese (room temperature)
- 1 C Confectioner’s Sugar
- 2 t Vanilla
Instructions
- In a large bowl, cream butter, sugar until well blended.
- Next add the egg, molasses, honey to the butter mixture.
- In another bowl combine all of the dry ingredients.
- Adding a little at a time mix in the dry ingredients into the butter mixture.
- Place in a bowl and cover with a damp towel and refrigerate 2 hours or overnight. (Make sure paper towel is damp enough to keep dough moist)
- Preheat oven to 325 degrees
- Roll dough on a well floured surface until it is about 1/4-1/2 thick. Use ninja cookie cutters and cut out your shapes.
- Place on an ungreased cookie sheet and bake for 5-8 minutes or until the edges are slightly browned.
- Allow to cool on a cooling rack.
- While the cookies are cooling, whip two bars of cream cheese, add vanilla, and add a little confectioner’s sugar at a time.
- Keep whipping until light and fluffy.
- Once cool, ice the front of one cookie and apply a second cookie on top.
Now you have some awesome cookies that might even get a giggle or two this holiday season. I know our family had a great time putting them together, and it was ever more fun to eat the “casualties” that didn’t quite make the ninja program.
