If you’ve been following the blog at any length of time you know I am NOT a morning person. That’s why one dish breakfast meals kinda make me salivate. Not just because OH MY YUM, but because that means less hassle in the morning to whip up something delicious, and that sounds like a win/win situation to me.
Even though I am not a morning person (I make Oscar the Grouch look like a fairy princess), I’ve always had a love affair with breakfast. Growing up we loved it so much that my mom would usually make a large family Sunday breakfast. Growing up in the South most of my life that meant things like buttermilk biscuits oozing with honey butter, bacon and sausage for miles to see, and of course sausage and gravy. (I’ll have to admit that’s not my favorite but my family loved it)
My mom also had this super duper fancy omlette pan the shape of a half moon. It was bright red and scratch from use. Looking back, I really thought that thing was made of magic. You could pile it up with eggs, ham, cheese until your little hearts content, and with a flip of the wrist and a clang of the top closing your omlette would cook to perfection. When mom pulled out that magic omlette pan of awesomeness, I knew that my belly was in for some GOOD eating. I’m surprised I didn’t ask my mom to will me that omlette pan it was kinda a demi god to my belly growing up.
Breakfast wasn’t just about food, it was about spending time with each other and in our house that usually meant getting in a razz or too with my siblings. The smart assery was injected into me at a very young age thanks to my dad. He’s always been proud to hear that my husband has been keeping up the tradition of being a royal pain in my ass, but I have to say at least I give him some pretty stiff competition.
Since our family homeschools and we have a really different schedule than most families, we’ve been trying to come up with our very favorite one dish breakfast meals. When our kids were growing up a big Sunday breakfast was the norm. Now that they’re all grown and flown hubby and I treat ourselves to a big breakfast a couple times a week. I’m a big fan of one dish breakfast meals and love to have them for dinner also. Thanks for the round-up there’s enough here to keep me satisfied for a long time.
