Spring time has FINALLY arrived here in Minnesota, and that means that asparagus is in season. What better way to celebrate than with this delicious roasted asparagus recipe? I used to HATE asparagus. It’s actually a funny story. When I was growing up, my mom’s idea of “vegetables” was green beans cooked in bacon fat and corn. (Did I mention I grew up in the South?)
Fast forward a few years, and my first husband loved vegetables. He actually got me to try asparagus for the first time, but he cooked it from a can YUCKO! Imagine slimy green fingers and trying to choke those down. That is what asparagus in a can tastes like! Of course I thought I hated asparagus.
Fast forward a few years later, and his mom actually cooked steamed asparagus from FRESH asparagus. That is when I learned to love the delicious spring vegetable! It is amazing.
What’s important when you buy asparagus is to store it properly. If you don’t it will dry out and become limp which leads to mushy asparagus. Normally, we just put water in a huge coffee mug and put in the fridge, but now I have found a Good Cook asparagus keeper that is made just for asparagus! It even looks like the cute little buggers. Just add water to the bottom and put your asparagus in until you are ready to use it.
Now this roasted asparagus recipe is one of my family favorites. We have it as much as we can during the springtime because nothing beats fresh in season produce! This is a recipe I have adapted with my children. Mr. Crunchy hates vegetables, and I cannot make a convert out of him. My kids love it so much though that we fight to get the last piece! Roasted Asparagus Recipe: Perfect Spring Recipe!
Ingredients
- Asparagus
- Sea Salt
- Olive Oil
- Parmesan Cheese (optional)
Instructions
- Preheat oven to 400 degrees.
- Rinse and pop the ends off of the asparagus (they should naturally pop the hard ends of with a small amount of pressure)
- Lay on ungreased cookie sheet
- Drizzle with olive oil and pinches of sea salt
- Top with freshly grated parmesan (if desired)
- Place in oven for about 7-10 minutes or until asparagus is a bright green cover.
- Serve and enjoy!

I love asparagus. I’ve tried fresh asparagus once and the rest canned by I only like a special kind canned. Green giant is the best. I’ll have to try this.

I love roasted asparagus. We actually do it that same way minus the cheese and sometimes squeeze a little lemon juice over it too. We did the same recipe and cook on the top rack of our grill… It makes them a little crispy and even better. YUM!
