Santa Fe Salsa, yummy. That is a word to describe it! When you think salsa you don’t always think sweet corn, but being raised in the South, sweet corn is kinda in my blood. You know; corn fritters, corn on the cob; cornbread; corn casserole! Just call me the Bubba Gumba gump of corn!
Since spring is here, and I am itching for some fresh fruits and veggies, I thought I would grab my sweet corn and figure out a new recipe. My kids and I came up with a great new variation on our favorite salsa recipe. It’s a Santa Fe style salsa because it has black beans and corn added to it, and let’s just said that I made a double batch and it’s ALREADY gone! (Guess I should be proud that my kids love salsa that much!)
This Santa Fe salsa is perfect with warm tortilla chips or you could use it to spice up some of your favorite Mexican dishes like my favorite enchiladas recipes. My family prefers it with chips and in soft tacos.
Now grab your fresh tomatoes, cilantro, and other goodies and get to chopping. I suggest you make a very large batch because it won’t last long!

It’s really easy to make and it tastes so much better than buying it from the store. If you haven’t made salsa by hand before you should give this recipe a try. It’s so easy and delicious too!

Santa Fe Salsa Recipe
Ingredients
- 3 large tomatoes (seeds removed)
- 1 medium onion
- 1/2 Jalapeno Pepper (seeds removed)
- 1/2 C Fresh Cilantro
- 1 T Rice Vinegar
- 1 T Cumin
- 1 t Chili Powder
- 1 can black beans
- 2 cobs of sweetcorn
- 2 T Lime Juice (if desired)
Instructions
- Put water on to boil, and place corn in boiling water for 5 minutes
- While waiting on the corn, remove the seeds from the tomatoes and jalapeno.
- Dice up the tomato, onion and jalapeno and add to food processor. Add cilantro (stems removed)
- Pulse the food processor on low until slightly blended.
- Add cumin, chili powder, and rice vinegar
- Quickly pulse salsa again (not too much you don’t want it too liquidy)
- Place salsa in large bowl.
- Rinse and drain the black beans.
- Remove corn from boiling water and allow to cool. Then remove corn from cob.
- Fold in black beans and corn into salsa.
- Cover and allow to chill overnight for best flavor
