Sometimes living with food allergies can be a royal pain in the butt, especially since dairy allergies run a muck in our house. It’s sometimes hard to get the good nutrients you need in your diet. That’s why when new dairy alternatives come out, our family gives them a whirl. Recently we learned about Silk’s new Almond Protein+ Fiber line of products and gave it blend a try.
In our house, healthy isn’t just about what you should and shouldn’t eat. It’s about getting back to basics and eating more whole foods. (Though I’m still trying to kick that Mountain Dew habit. It’s something fierce!) Silk Almond Protein + Fiber is a great dairy alternative that I can see being a great part of a healthy lifestyle. Non-dairy products like this are one of my favorite things to bake with. They don’t change the flavor of my baked goods too much, and they give your muffins an added goody like fiber with out having to add something like bran (yuck).
The thing with our family is if it tastes like crud, we won’t eat it. Secondly, if it feels like work we won’t do it. That’s why staying healthy is all about good food and having fun. I’ve long thought that you had to be a gym rat and eat green gross beverages to be healthy, and that’s so far from the truth. We hike, canoe, garden, play tag, and dance like silly idiots. We enjoy these activities so much that we don’t even think of it as being ‘healthy.’
It’s the same thing for food. We make it a fun family time in the kitchen. Whether we are making homemade pizzas for pizza night or baking up banana muffins of awesomeness, we are in the kitchen together having fun and teaching the kids to cook at the same time. You might be thinking “oh when am I going to have the time to do that?!” Here’s the thing, you don’t have the time not to. American families spend so much time overscheduling and doing things we are told are important. I challenge you to be a rebel. Buck the system, and CHOOSE to make the time.
Being healthy together and cooking together makes stronger and healthier families. Unscheduling yourself for just a bit to create delicious whole meals with the kids builds stronger relationships. Happy kids, happy tummies, and happy family. That is all something that sounds like it’s worth cutting out some of the extras for to me.
Now onto the yum! This weekend the kids and I made these banana muffins of awesomeness aka not yo mama’s banana muffins. We made two batches one with the Silk Almond + Fiber and one with Silk Coconut Milk for my daughter with a nut allergy. Both batches turned out amazingly. They were moist and banana like all without any major food allergens in them! Are you salivating yet? I know I am. Onto the muffins!

- Prep Time: 10 mins
- Cook Time: 25 mins
- Total Time: 35 minutes
- Yield: 12
Ingredients
- 4 Cups All Purpose Flour
- 4 tsp Baking Powder
- 2/3 Cups Applesauce
- 1/2-1 T Cinnamon
- 2 1/2 t Vanilla Extract (none of the imitation stuff)
- 1 C Silk Almond + Fiber (or other non-dairy “milk)
- 2-3 Ripe Bananas
- 1/2 Cup Light Brown Sugar
- 1/2 Cup Pure Cane Sugar
- 1/3 C Olive Oil + 1 Tbsp
Instructions
- Preheat the oven to 425
- In one bowl mix the flour, baking powder, cinnamon, and sugars
- In a separate bowl mash the bananas, and then add olive oil, milk, applesauce, vanilla. Combine
- Mixing a little in at a time mix the wet and dry ingredients. Only mix until combined.
- Fill muffin pan making sure to fill all the way up.
- Bake at 425 for five minutes and then reduce heat to 375 for 20-22 minutes
- Remove and allow to cool
