Having a swiss and pancetta omelette for breakfast is a great way to make sure you won’t be hungry anytime soon. If you are anything like me, cereal doesn’t cut it. If I have a bowl of cereal I am hungry less than an hour later, but if I eat a breakfast that is chock full of protein I can make it until lunch!
When I was a kid, one of my favorite things that my mom used to make was ham and cheese omlettes. I remember this bright red omlette pan that she had, and probably still does. It made it so easy to make and flip the omlette. Sunday morning breakfasts were a tradition in our house, and it’s something that I have tried to continue in our house as well.
At least one morning a week, I try to cook the kids breakfast and we all sit down together to spend sometime together. It’s a great way to bond over some amazing food, plus it gets them to sit still at least once a week!
Swiss and Pancetta Omelette is born
Rather than plain old omlettes, we add pancetta to ours. (The kids think it makes the omlettes fancy) Recently I discovered the world of pancetta. Pancetta is an italian bacon. It is full of some amazing flavors and a little bit goes a long way. My local Trader Joe’s store sells cubed pancetta that is perfect to toss in this swiss and pancetta omlette. It’s super fast and simple, and makes a really favorful, filling breakfast option!
Normally when I make these once a week, and my eldest daughter and I split the omlette. Thow in a piece of toast and a glass of juice or piece of fruit for a great breakfast!

Swiss and Pancetta Omlette: Tasty and Perfect for Quick Breakfast!
Ingredients
- 3 eggs (beaten)
- 2 T Pancetta
- 1/4 cup shredded swiss cheese
- Salt and pepper to taste
- Olive oil (to grease pan)
- parsley (garnish)
Instructions
- In a bowl, whisk together the salt, pepper, and eggs.
- Place 1 t of olive oil in pan and heat on medium heat until it coats pan.
- Add egg mixture and allow to cook until slightly bubbly.
- Add cheese and pancetta, then fold egg in half.
- Wait 30 seconds, and then flip to cook for an additional 30 seconds.
- Remove and serve hot. Garnish with parsley
