Before reading this great book, I thought I knew everything there is to know about fondue. I mean it’s delicious, it’s easy to make, and it’s something you can make for tons of special occasions.
Who knew that there were actual “fondue fables” and a whole sub-culture about fondue love! (I totally need to get into this culture by the way)
There are over 200 recipes in this scrumptious book and trust me you are going to have a hard time deciding which recipes to make first with titles like smoked salmon and cream cheese fondue, chocolate marshmallow fondue, or even goat cheese and thyme fondue.
How to Make Swiss Cheese Fondue? FAQs and TIPS
Fondue Tip #1: Make sure to coat the cheese with flour. This is a pretty important step to make sure your cheese melt into a smooth creamy delicious treat. (It’s not the end of the world if you forget, just check out our troubleshooting steps below)
Fondue Tip #2: Make sure your wine is hot enough BEFORE adding the cheese. The wine needs to at least be warm to the touch before adding the cheese. You don’t need to bring it to a boil, but if it’s too cold when you add your cheese the cheese will be clumpy and harder to get to a smooth consistency.
Fondue Tip #3: HAVE FUN! Take it slow, stir, stir, stir and if you get in a pickle check out our troubleshooting steps below. Even if it doesn’t look amazing it will still TASTE amazing. Have fun making it, and don’t let perfection get in the damn way.
FAQS: What Happened to my Fondue?
Does it matter what kind of swiss cheese you use? Nope! My favorite brand to get that nice tang that swiss cheese has is Jarlsburg, but it is a little bit pricey. As long as you can find true block swiss cheese you can use any type of swiss cheese for this fondue recipe.
Why do I need flour in this fondue? Through practice, I’ve found that coating the cheese in a little bit of flour helps the cheese meld together in more of a creamy, stretchy, smooth melty consistency. Otherwise sometimes the cheese tends to be a little clumpy and can separate.
Is this a gluten free fondue recipe? Not as it is written, but all you need to do is use the products below and it becomes a gluten free fondue recipe.
Why is my fondue clumpy, stringy, insert weird looking adjective here? I
For clumpy fondue: Did you forget to coat your cheeses with the little bit of flour? If you did, it’s not too late after you sprinkle the dry white whine a little bit at a time sprinkle the flour over the top of your fondue and gently fold in.
For stringy fondue: If it’s stringy, you might have added the cheese to the liquid before the liquid was a nice temperature to melt the cheese.
For liquidy fondue: If it’s still super separated and liquidy and not melting, slowly add more cheese. Don’t add more until the first round is melted.
