One of the things that I have known since I was a little girl was that eating meals as a family is really super important. My family growing up didn’t always get along, but we did eat dinner together almost every night. (That was unless my dad was working the night shift)
That’s why in our family Mr. Crunchy and I do our best to have dinner with the family as much as we can. It’s a little tough with Mr. Crunchy being a truck driver and all, but we do the best week. We definitely get in at least one night a week that we all sit down and eat together.
There is kinda this running joke between him and I about who’s the cook in the house. Total confession time about my cooking habits. I am an all or nothing kinda cook. It’s either a full course meal or peanut butter and jelly sandwiches. There’s really no middle ground. Since Mr. Crunchy is gone with a regional job a couple nights of the week, he was being a smart butt and told me that we were all going to be thin as rails because I would never cook or our grocery bill would be through the roof because I was always ordering take out. (A girl has them on speed dial and never hears the end of it, I swear!)
That’s why I am trying to come up with some amazing recipes that are in that middle ground. They taste yummy, but are super easy to do on a busy weeknight. My husband found a chicken meatball recipe a while back that he liked, but it was kind of lackluster in my book. That’s why when we wanted to have spaghetti and meatballs this week, I decided to make my own go at it! When I headed to the store, I found Tyson’s Ground Chicken and it has been the brand that we have used ever since. It was convenient and was a little bit leaner than the ground beef.
This recipe is great because it’s super easy to make, fun to get the kids involved, and you can even make big batches to freeze to use later!

Ingredients
- 2 pounds Tyson Ground Chicken
- 1 egg
- 1/2 cup Parmesan Reggiano
- 1/2 cup Parmesan Cheese
- 1 clove garlic (minced)
- 1 tsp fresh cracked pepper
- 1 tbsp worcestershire sauce
Instructions
- Preheat 350
- In a bowl mix chicken, garlic, worcestershire and pepper.
- Mix with a spoon or by hand.
- Add the cheeses and mix by hand again.
- Roll into small balls (about 1/3 cup sized) and place on greased cookie sheet.
- Bake in oven for approximately 15-20 minutes or until cooked all the way through.
- Serve over fresh pasta or in a meatball sandwich! Enjoy!
You want to know the funny part about Mr. Crunchy picking on me? Now he complains that he never gets to eat all these recipes because I never cook when he is actually home! Of course not, he’s home to cook so why would I do it ? Doesn’t a girl deserve a night off?
