Lemon Meringue Pie Recipe
EVERY major holiday was just an excuse to get my mom to make her lemon meringue pie recipe. As a kid, I didn’t care if it was Easter dessert, Christmas pie recipe time, Mother’s Day brunch ideas we needed, or it was the second Thursday of the month. There is ALWAYS time for lemon meringue pie.
It’s actually kind of a funny story how this pie came to be in our family. For years my scatter brain thought it was a family homemade pie recipe that was handed down to from my great grandma, my Nana, to my mom.
Not sure when it was but just a few years ago, I finally asked my mom how my Nana came up with the lemon meringue pie recipe that inspired my own version. With a giggle upon her lips, she shook her head and told me the big “family secret.” Nana hadn’t made this recipe up at all. It was something my mom learned in Home Economics class and over the years, she made it her own recipe with little tweaks and changes!
Well, I’ll tell you my mom is magic because to this DAY I still can’t get my meringue whipped up as high as she does. The one time I did make it a few inches higher, you bet I was on the phone with my mom sharing my happy dance that I beat those eggs into submission!

Now it’s my turn to take a whirl on my favorite homemade pie recipe. I don’t what it was about it’s creamy, lemony goodness that drove me to crave it all year long!
I just LOVE the lemon flavor; like hit me in the face with a shovel lemon wonderous lemon. That’s one reason this pie is a little devil to get out of the pan. It doesn’t come out in a pretty slice, but OH MY does it taste like heaven.
If you don’t quite like as much lemon as I do, that’s ok too, you can still be a cool peep too! Adjusting the lemon down, doesn’t affect the pie. Just make sure to get at least 1/4 cup of lemon juice in there so you can feel the cool, crisp zing of lemon on your tastebuds!

Lemon Meringue Pie Recipe
Ingredients
- One ready made graham cracker pie crust
- 3 eggs (separated)
- 1 cup sugar
- 1/8 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1 can non-fat sweetened condensed milk
- 3-4 Tbsp lemon juice
Instructions
- Preheat oven to 350 degrees
- Separate the eggs. Put yolks in one bowl and egg whites in another. Set egg whites aside (let set until room temperature)
- To the egg yolks, add the lemon juice and sweetened condensed milk. Mix until completely blended
- Pour lemon mixture into the pre-made pie crust
- After the egg whites are room temperature, beat until frothy.
- Once frothy, add salt and cream of tartar until soft peaks form
- Adding 1 tablespoon at a time, add sugar and beating a lot between each additional Tablespoon. Beat until stiff peaks form (can take up to 10 mins)
- Once stiff peaks form, use a spatula to place meringue on top of lemon mixture. Make sure to seal (bring to edges) the pie with the meringue.
- Place pie on a cookie sheet and place in the oven at 350 for approximately 5-10 minutes or until the meringue is golden brown.
- Set on the counter until cooled, and then refrigerated for 1-2 hours or overnight.
