3 tablespoons unsalted butter, cut into three pieces
2 tablespoons coconut oil
1/4 cup light brown sugar, lightly packed
1/2 teaspoon vanilla extract
1/2 cup + 2 tablespoons chocolate chips
Instructions
Place the old-fashioned oats on a large baking sheet and bake for 5-6 minutes at 350 degrees. Set aside when done roasting.
In a small saucepan, combine the honey, butter, coconut oil, and light brown sugar. Cook on low-heat until the butter is completely melted. Remove from heat and allow the mixture to cool to room temperature.
Place parchment paper on a 9×9 baking dish. Set aside.
Place the old-fashioned oats, and the honey/butter mixture in a large mixing bowl. Add in the vanilla extract and chocolate chips; mix everything together.
Pour the granola mixture into the 9×9 baking dish and press down firmly all-around. You will want to make sure when you press down it is hard because you do not want them to be loose. If they are too loose they will fall apart.
Refrigerate for 2 hours.
Notes
Remember to place the extra granola bars back into the refrigerator.
