With spring almost officially here, I wanted to start whipping out those veggies and lighter flavors. Just last week we actually hit 53 here in Minnesota. That might sound like not a big deal, but to put it in perspective we were almost ONE HUNDRED degrees colder this winter. This girl is really looking forward to grabbing my flip flops, some Italian pasta salad, and enjoying the warm spring breezes in my back yard. (Don’t judge)
Warm weather here we come with 40s all next week. That means I am going to whip up a big batch of my easy Italian pasta salad. This is one of our favorite recipes, and we can eat on it all week long. It’s so light and refreshing. My mouth is watering just thinking about it. It’s been so long since we’ve had fresh veggies, it will be nice to get away from the heavy comfort foods of winter.
What makes this salad special is the homemade Italian dressing, the bright red peppers that are in there. They add such a great punch of flavor.
It’s awesome! (my other secret weapon is cubed pancetta, which adds a nice hint of flavor)
Easy Italian Pasta Salad Punched With Flavor

Ingredients
- 16 oz. Rotini or Fusselini Pasta Cooked
- 1/4 Cup Cubed Pancetta
- 1/2 Cup Carrots (Match Sticked)
- 1/2 Cup Cucumber slivers
- 1 Cup Olives Sliced
- 1/2 Red Pepper Slices
- Italian Dressing (add to your desired coverage)
- 3/4 C Vegetable or Olive Oil
- 1/2 C Balsamic Vinegar
- 2 Garlic Cloves Finely Minced
- 3 T Parmesan Cheese
- 2 T Oregano
- 2 T Basil
- Salt and Pepper to Taste
