Santa Fe Salsa Recipe

  1. Put water on to boil, and place corn in boiling water for 5 minutes
  2. While waiting on the corn, remove the seeds from the tomatoes and jalapeno.
  3. Dice up the tomato, onion and jalapeno and add to food processor. Add cilantro (stems removed)
  4. Pulse the food processor on low until slightly blended.
  5. Add cumin, chili powder, and rice vinegar
  6. Quickly pulse salsa again (not too much you don’t want it too liquidy)
  7. Place salsa in large bowl.
  8. Rinse and drain the black beans.
  9. Remove corn from boiling water and allow to cool. Then remove corn from cob.
  10. Fold in black beans and corn into salsa.
  11. Cover and allow to chill overnight for best flavor
