Since moving to Minnesota, one of the things I am learning to cook a lot of are crockpot soups. They are easy to make and can be ready for the kids when they head inside from a day of playing in the snow. Winter is cold everywhere, but this winter we are having crazy low temperatures. As I am writing this post it’s negative FIFTY outside today? Don’t believe me? Then just check out this video we took today. (Below the yummy soup photo)
Yep, that is boiling water instantly turning into water vapor. Crazy, right?! We knew the weather was coming, and that’s why we headed to Rainbow Foods before the craziness hit. There was no way I was going shopping when it hit. When we did go shopping it was still so cold that our sliding doors on the minivan wouldn’t open. The kids had to crawl through the back of the van to get out!
We were in a big hurry because it was flipping cold outside, so I was glad to be able to check the Rainbow Foods health key™ system to grab what I needed and get out. Our family is trying to eat more organic stuff, so we just look for the organic health key™ tag and grab the stuff we need and we are on our way. It makes it so much easier than trying to read the box or the itty bitty label on the shelf.
Growing up I loved the canned vegetable soup (oddly enough I normally hated vegetables), so we made this homemade vegetable soup as an homage to my younger years. (My kids call this “when dinosaurs roamed the Earth) We hope you enjoy it as much as we did! Stay Warm!
PrintCrockpot Vegetable Soup Perfect for a Cold Day

- Total Time: 8 hours 15 minutes

Ingredients
- 3 Carrots (Peeled and Cubed)
- 2 Celery Ribs
- 5 Small Yellow Potatoes (Peeled and Cubed)
- 1 C Corn
- 1 C Green Beans
- 1 14oz Can Stewed Tomatoes
- 1-2 T Italian Seasoning
- 1/2 T Garlic Powder
- 1/2 T Onion Powder
- 1 Garlic Clove (finely minced)
- 1 T Olive Oil
- 2 32 oz Cartons of Organic Chicken Broth or Stock (can substitute veggie as well)
- 1/2 Medium Onion
Instructions
- Dice all of the vegetables and set aside
- In a dutch oven place the olive oil, cook the garlic and the onions until the onion is see through. Place garlic and onion in crockpot.
- Place all ingredients in crockpot, and add herbs to taste.
- Place on low for eight hours or until potatoes are soft.
- Serve with crackers or crusty bread.
- For faster preparation, cook on medium in dutch oven and simmer for one hour.
