Loaded Baked Potato Soup That Will Blow Your Mind!
As soon as the months start to get cooler, I seriously start to crave my loaded baked potato soup recipe!
Heck, what am I lying about I probably start dreaming of loaded baked potato soup near the end of August.
This year it’s really starting to get chilly a little bit early, so that means that the soup spoon and ladle are coming out a little bit early.
Every year, we love to kick off soup season with one of our staple easy soup recipes like this loaded baked potato soup, or as we like to call it creamy bacon cheddar potato chowder.
One of the things that have always boggled mind my is what makes a soup a soup and a chowder a chowder! (You know that you have been wondering this too!)
In our house it’s a soup if you can slurp it. It’s a chowder if you could use a fork and drink the rest! That’s why we didn’t dub this loaded baked potato soup, it had too much chewing going on for that silliness. It’s a chowder! A whole meal in a bowl!
When I revised this recipe, we added more bacon, more potatoes, and more cheese! Considering the family practically arm-wrestled over the last bowl I think it’s safe to say that this recipe is Quirky family approved!
Don’t let all the fancy schmancy pictures of this soup scare you off btw! As I come up with these recipes, I am learning to cook too. You really can’t mess this recipe up. The only things you need to watch out for is to not boil your potatoes too long or they will be mushy and to not heat your soup too fast or you will burn your milk. (Trust me, you will smell it if you do!) Other than that, this is a pretty easy, peasy potato soup recipe!
We like making big batches in the dutch oven, so we can have loaded baked potato soup leftovers for the week. Though as the kids are getting older it is much harder to have leftover anything around!
Now are you ready to get cooking? Here’s what you need for the creamy bacon cheddar potato chowder!
Ingredients:
- 8 Medium Potatoes Peeled and Cubed
- 16 oz Chicken Stock (plus a little more to cover potatoes if needed)
- 1 cup 2% Milk
- 1 Cup Heavy Cream
- 16 oz Sharp Cheddar Cheese (divided)
- 2 Cloves of Garlic Minced
- 4 Green Onions (divided)
- 1.5 Pounds of Bacon Cut Into Pieces
- Pepper (to taste)
- Salt (to taste)
- Garlic Powder (to taste)
Directions:
- In a dutch oven, cook the bacon and remove from the pan. Drain.
- Place 2 Tbsp of the bacon grease in the oven.
- Add garlic and potatoes, and chicken stock (just enough to cover all potatoes)
- Cook on medium heat until potatoes are almost tender.
- Add cream and milk reduce heat to low.
- Mix in cheese, half of bacon, half of green onions, pepper, garlic powder, and salt.
- Continue to stir constantly until the soup is blended.
- If soup is too liquidy, continue to heat on low until it reduces (or add a small amount of flour)
- Serve warm and garnish with green onions, cheese and bacon.

This is a great first soup to learn to make. Just remember to keep the heat lower when you are melting the cheeses because you don’t want to scald the milk/cheese. Other than that it’s SUPEr simple! I can’t wait to hear what you think!

Meagan, That’s a great question. You want to remove all of the grease and the bacon (save 2 Tbsp of grease to flavor the soup) Then crumble the cooked bacon and add back to the original pot! Good luck, and feel free to message back if you have any more questions.
