Crockpot soup recipes are my jam right now. You just dump some amazing ingredients in your slow cooker, turn that bad boy on and walk away. Four hours later dinner is done man! There’s just something magical about it!
One of the other ways that slow cooker recipes are magical is that they are an amazing way to sneak vegetables into your family meals. We are a bunch of weirdos and I’ve been blessed with children that actually love vegetables, but in case you aren’t as lucky as I am then you can take my slow cooker recipe magical powers and pair them with Bird’s Eye Flavor Full vegetables. Funny story about this tortilla soup recipe. The first time I made this recipe I was actually trying to make a tortilla chicken dump chicken recipe. It was like this recipe, but with way less broth. It was good, but it wasn’t like OMG lay down and just let me drown myself in this whole bowl of yumminess good. It got a collective “meh” from the family, so it was back to the drawing board.
Since it was a little too much tomato an not enough broth, I got this brilliant idea. Why not make it a crockpot tortilla soup recipe?! The second shot at making it, was magic. Tears rained down from the heavens, angels sang, and our mouths devoured almost a whole crock pot full of soup in one night! It was a challenge to save enough soup to take my pictures for this post. Darn vultures!
I do have to tell you the secret ingredient in this tortilla soup recipe isn’t just the crockpot super powers. It’s the tang of lime in the Bird’s Eye Lime Corn. Rather than adding lime to the soup, it adds the most gentle kick of lime to take the flavors up a notch. This is a newer product, so I had to use the Bird’s Eye product locator to find this in my area, but it was super duper easy once I used the handy dandy tool! Now the only thing you have to find is a big enough bowl and spoon so you can dig into this hearty soup recipe!
Ingredients:
- 2 32 oz Chicken Broth
- 1 Pound Chicken Breasts (shredded before serving)
- 10 Oz Bird’s Eye Flavor Full Lime Corn
- 1 Teaspoon Chili Powder
- 3 Teaspoon Cumin
- 1 Teaspoon Onion Powder
- 2 Can Black Beans Drained
- 1 Can Fire Roasted Tomatoes Drained
- 1 Jalapeno Sliced and Seeded (optional for a little more fire)
- 2 Cloves Garlic Minced
- 1/2 Small Onion Diced
- Black Pepper (to taste)
- Salt (to taste)
Directions:
- In a large crockpot, place 4-5 large chicken breasts on low while you chop the vegetables and herbs.
- Pour in the chicken broth and add all the ingredients.
- Allow to simmer for 4-6 hours on low, or until the chicken is easily shredded with a fork.
- Shred chicken with the fork and let simmer for another 10-15 minutes.
- Serve warm and top with tortilla strips, sour cream, or cheese!
