One of my favorite dishes to bring to fourth of July gatherings are these red, white, and blue cupcakes! They are super fun and easy to make, plus they are always a hit with the crowd. (It’s definitely a bonus when there are none leftover to take back home)
When I was a kid, I have such fond memories of the fourth of July. No matter where I lived in the country, we always made sure to find out where the local parade and fireworks were being held. The earliest memories I have is when my family and I would go to the North Carolina State Fair Grounds in Raleigh and watch the fireworks from our lawn chairs. It was always such a spectacular display of lights and the music they set it to was amazing. I was about 7 years old at the time, and it was probably one of the coolest memories I have of living in NC.
I would love to tell you that now that I am “grown up” my childlike enthusiasm has waned for fireworks, but it hasn’t. My family and I still carry on the tradition of going to see the local fireworks on the 4th of July every year. This is our first year in Minneapolis, so it’s going t be interesting to see how the state of Minnesota celebrates the birth of our country.
We don’t have any parties that we are attending this year, but I think we are still going to make a batch of these red, white, and blue cupcakes and take them when we watch the fireworks this year. They are always a hit with the kids, and they really enjoy making them. We hope your family enjoys them as much as we do.
Ingredients:
White Cake Mix
Cream Cheese Frosting or Homemade Cream Cheese Frosting
Red Food Coloring
Blue Food Coloring
Homemade Colored Sugar
Cupcake Holders
Directions:
Follow the cake mix instructions, and set batter aside.
Split the batter into three separate bowls.
In the first bowl, add approximately 15 drops of blue food coloring (or until desired color of blue)
In second bowl, add approximately 15 drops of red food coloring (or until desired color of red)
Leave third bowl white.
Starting with blue batter, fill cupcake holder 1/3 of the way full.
Next add another 1/3 with white batter.
Top off the cupcakes with 1/3 of red batter.
To get straight across layers, make sure to place batter to the edges of the holder so you can no longer see the bottom layer. This will help ensure straight layers.
Cook according to cake mix instructions.
Once cupcakes are cool, frost with cream cheese frosting and top with colored sugar sprinkles!
